Why This Recipe Works

Chia seeds create a naturally creamy pudding that's rich in fibre, while coconut milk adds a smooth texture and subtle sweetness. Fresh mango provides vitamins and natural fruit sugars, Greek yogurt contributes protein and creaminess, and pumpkin seeds add crunch and important minerals.

Storage

Store covered in the refrigerator for up to 2 days.

For the best texture, add the pumpkin seeds just before serving so they stay crunchy.

Frequently Asked Questions

Can I use frozen mango?

Yes. Allow the mango to thaw before layering it into the parfait.

Can I make this dairy-free?

Absolutely. Replace the Greek yogurt with your favourite dairy-free yogurt alternative.

Can I prepare this the night before?

Yes. In fact, overnight chilling gives the chia pudding the best consistency.

Can I use another fruit?

Certainly. Pineapple, kiwi, strawberries, or blueberries all make excellent alternatives.
